Salmon Patties
- 1 can (16oz) salmon
- 1 small onion, finely chopped
- 2 Tbsp. minced fresh parsley or chives or dill
- 2 large eggs well beaten
- 1 1/2 cups fine dry bread crumbs
- 3 Tbsp. butter or oil for frying
- 1 tsp. Old Bay seasoning
- 1 tsp. season salt or garlic salt
- 1 tsp. black pepper
- Turn salmon and liquid in a medium bowl
- Flake with fork, crushing any bones
- Mix in onion, parsley, pepper, salt and seasoning
- Mix beaten eggs with salmon
- Add enough bread crumbs for the mixture to hold shape
- Shape into 12 small patties
- Coat patties in a thin layer of extra breadcrumbs
- Chilling overnight can help them to hold together
- In a heavy skillet on medium heat, melt butter (or add oil)
- Fry patties slowly on one side, then turn and fry until brown on the other
side. Add more oil/butter as needed.
