Salmon Patties

  1. Turn salmon and liquid in a medium bowl
  2. Flake with fork, crushing any bones
  3. Mix in onion, parsley, pepper, salt and seasoning
  4. Mix beaten eggs with salmon
  5. Add enough bread crumbs for the mixture to hold shape
  6. Shape into 12 small patties
  7. Coat patties in a thin layer of extra breadcrumbs
  8. Chilling overnight can help them to hold together
  9. In a heavy skillet on medium heat, melt butter (or add oil)
  10. Fry patties slowly on one side, then turn and fry until brown on the other side. Add more oil/butter as needed.
