Quiche (No Crust)
This quiche forms its own faux-crust as it cooks.
- 4 oz. crumbled feta cheese
- 2 Tbsp. butter, melted
- 4 eggs, beaten
- 2 tsp. salt
- 1/2 cup all-purpose flour
- 1 1/2 cups milk (2x = 1.5 pints)
- 2 tsp. spicy mustard
- ~1/2 cup diced veggies (1/2 publix pre-diced mix)
- 1 can (5oz) of smoked ham, crumbled
- Preheat oven to 350 degrees
- Spray a pie pan
- Place veggies in pan
- Top with meat and cheese
- Mix eggs, milk, flour, salt, mustard, and melted butter together
- Whisk together until smooth, but you will have a few tiny lumps of flour

- pour egg mixture into pan
- Bake for about 35 minutes, until set (no jiggly eggs)
