Meatloaf
This fills one 9"x5"x2-1/2" bread pan. You can also roll it into balls for meatballs.
- 2 lbs. ground beef
- 2 eggs
- 1 cup of cracker crumbs or bread crumbs
- 1 onion
- 1/4 cup ketchup
- 1 tbsp. salt
- 1 1/2 tsp. pepper
- onion powder (optional)
- about 1 1/2 tsp. minced garlic or garlic powder (optional)
- Italian seasoning (optional)
- Heat oven to 350°F.
- Thoroughly mix beef, egg, and crumbs.
- Mince onion, as small as possible.
- Add onion, ketchup, and seasonings.
For Meatballs
- Roll into balls about 1 1/2 inch in diameter and place on a greased pan
- Cook for 20-30 minutes, turning over halfway through.
For Meatloaf
- Fill a greased bread pan with mixture.
- Cook for about half an hour.
- Add more ketchup on top, then put back in the oven for up to half an hour.
- Let sit for at least 15 minutes.
